Quinoa, lentil and vegetable soup
This is another one of my favorite homemade soups made with nutrient-packed ingredients like quinoa and lentils.
Lentils are great for you as they are full of protein and fiber, as well as folate, iron, potassium, phosphorus and calcium.
And quinoa, also called the „Food for Gods“, has the highest nutritional profile and is an extremely high-energy grain.
It contains all eight amino acids to make it a complete protein and has a protein content equal to milk. Just remember, it is a good practice to wash quinoa before cooking to remove bitter coating called saponin.
This soup also has all sorts of vegetables in it. Everything that you have in your fridge is good enough. It is really thick which is the way we like it. If you don’t like it that way, feel free to add more water.
Preheat large pot on medium heat. Add 2 tablespoons of olive oil. Add garlic and onions and saute until translucent. Now add carrots, pumpkin, zucchini, peppers and saute for another 5 minutes.
Add tomato puree, water, quinoa, bay leaves, garlic powder, sugar, salt and spices and bring the mixture to a boil. Cover and cook on low for 20 minutes or until tender. Taste and adjust seasonings as needed.
At the end, add nutritional yeast and cooked lentils and simmer for another 2 minutes. Serve and enjoy.
