Chia pudding

  • 200 ml almond milk
  • 4 tablespoons chia seeds approx. 50g
  • 200 g coconut or soy yogurt
  • maple or agave syrup to taste
  • 1 teaspoon maqui berry powder
  • 1/2 cup fresh raspberries

  1. Whisk together 200 ml almond milk, chia seeds, and sweetener (if using) in a bowl. Let it sit for 5 minutes and then whisk again to prevent it from clumping. Let it sit at room temperature for 45 minutes.

  2. Add 200 g coconut/soy yogurt and 1 teaspoon maqui berry powder and stir well until combined. 

  3. Serve in jars, add fresh raspberries, top with coconut/soy yogurt and fresh or frozen berries. Enjoy!

Recipe Notes

Besides being one of the most powerful sources of natural antioxidants, maqui berry powder also gives this beautiful purple color. 

If you don't have it at home, you can use any other powder like pitaya, blue spirulina, beet powder... or no powder at all.
